Certificate in Professional Brewing Science

The Professional Brewing Science Certificate program is designed to provide the student with the foundational knowledge for successful employment in the brewing profession. The first two quarters of the program include classroom work in areas such as biology, chemistry, and mathematics. During the last quarter, students will spend time in a brewing facility in order to supplement classwork with application. Courses will be delivered primarily on-ground, with some online work required.

The program is designed for completion by full-time students in 9 months and requires satisfactory completion of 40 credit hours. Graduates of this program will develop skills to:

  • Demonstrate foundational knowledge of the microbiology and biochemistry concepts of fermentation pertaining to the brewing of beer.
  • Demonstrate foundational knowledge of general physics and fluid dynamics and engineering concepts pertaining to the equipment used in the brewing of beer.
  • Summarize the history of alcohol fermentation and the brewing of beer, and how this history relates to the legacy and future of brewing.
  • Identify classic and craft-brew beer styles and describe production of each.
  • Analyze and evaluate business concepts of the brewing industry and the day-to-day activities involved with the operation of a solvent brewing facility.
  • Analyze and demonstrate the steps in brewing process - grain handling, malting, malt analysis, yeast and fermentation processes, raw materials and wort production, beer production, quality control, packaging processes, flavor production, and control.

On-site spaces to accommodate the didactic learning experiences include spacious classrooms, conference areas, and labs appropriate for chemistry, microbiology, and physics instruction. Instruction is facilitated by faculty workspace, lab and lecture space, lecture podiums, dry erase boards, smart classroom technology, student tables/chairs, and all necessary equipment and supplies. The Moodle learning management system is used by all faculty and students. Internship time will be spent at the Smoky Mountain Brewery brewing facility. The brewery sits on an 1850 sq ft. 6" concrete slab with trench drains throughout. The brewery is a 15 Bbl (barrel), 3 vessel brewhouse, steam heated with 22 process tanks from 30 to 45 barrels each.

Applicants to major must successfully complete the first quarter foundational science courses with a grade of C or better. Student may apply to the major rotation, but admission will not be made until grades are available for the first quarter foundational courses.

To receive a degree or certificate, a student must satisfy these requirements:

  1. The student normally must complete the course requirements in the catalog in effect when the student enrolled. However, academic programs are subject to change at the discretion of the institution. Students who leave the college will be required to meet catalog requirements at the time of their return. Students may request Dean/Department Chair and Executive Vice President approval for course substitution. Deviation from any program requirements must be approved by the Executive Vice President.
  2. The student must earn the minimum grades designated by the program in all required courses.
  3. The student must have a cumulative grade point average of 2.0 or higher for all coursework taken at the college (if higher CGPA is required by the program, this requirement must be met). At least 40% of any degree or certificate program must be taken at South College (higher percentage may be required by program).
  4. The student must complete the Placement Office exit program and all outcomes assessment exams prior to graduation.
  5. Satisfactory completion and submission of all Writing Across the Curriculum requirements is mandatory for all students entering during or since fall quarter 2005, except post-baccalaureate and graduate programs.
  6. The student must abide by all college rules and regulations and settle any financial obligations to the college prior to graduation.

A program rotation will be admitted at least annually. All graduation requirements, grading procedures, transcripts, and transfer policies remain consistent with those currently in affect for all other South College students.
